Chocolate Chip Cookies

I have been making chocolate chip cookies since I was old enough to read the directions on the back of the bag. Tollhouse has always been my go-to recipe. I’ve tried dozens of other recipes over the years… all of the different ones claiming to be “the best ever chocolate chip cookie recipe” or “the ultimate chocolate chip cookie” or even “the perfect chocolate chip cookie”. Of course, they were all good and did not go to waste. Chocolate chip cookies are like pizza, they may not be the best, but you’ll still eat it because it’s a chocolate chip cookie. None of these recipes have ever compared to the original, though; at least not in my opinion. In the end, I always come back to the one on that Nestle’s bag. That was until just the other day. I decided to experiment. I swapped some ingredients around, tweaked a few things, and I think these subtle tweaks actually make the recipe even better (Gasp!). They definitely got rave reviews from my family. It’s still the same basic recipe, but adding the brown butter and extra brown sugar makes them not only a bit more caramely, but it gives them a slightly crunchy outside, while the middle is still soft. Chocolate Chip Cookies

1 cup melted brown butter
1 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 12-ounce bag chocolate chips

Preheat oven to 375°.

Mix together brown butter and sugars until well-blended. Add eggs one at a time, beating thoroughly after each. Add vanilla.

Sift together dry ingredients. Gradually add to the butter/sugar mixture and blend by hand. Do not over mix. Mix in the chocolate chips by hand.

Drop by tablespoonfuls onto parchment paper covered cookie sheets. Bake for 10-12 minutes. Cool on cookie sheets for a minute or two before transferring to cooling rack.
