Strawberry Brownie Cheesecake Parfait

I found myself with the unexpected pleasure of some leftover brownies the other day (and how often does that happen?). They were on the verge of getting stale, although I’m sure someone would have eaten them… ahem… no one’s looking, right? But, rather than watch them get old or shovel them down quickly before they could, I decided to experiment a bit. Inspired by a recipe I found on Pampered Chef and adding in some fresh strawberries, the brownies became a brand new dessert. Extremely rich and sweet, you’ll want to make sure you serve it after a light meal.

Strawberry Brownie Cheesecake Parfait

3 ounces white chocolate (I used white chocolate chips)
3 tablespoons milk
8 ounces cream cheese (at room temp)
1/4 cup powdered sugar
1 cup frozen whipped topping, thawed
6 brownies, cut into bite-size pieces (recipe here)
1-1 1/2 cups sliced strawberries

Combine the white chocolate and the milk in a microwave-safe bowl; microwave on high for 30 seconds to 1 minute, stirring halfway through. Once melted, stir until smooth. Set aside. In a medium mixing bowl, combine the cream cheese and sugar; mix well. Gradually mix in the white chocolate mixture until smooth and fold in the whipped topping.

Spoon a dollop of the cheesecake mixture into the bottom of four glasses. Layer in a few of the brownie pieces and the strawberry slices. Continue layering, ending with a final dollop of the cheesecake mixture. Serves 4.
