Shredded BBQ Chicken
1 whole chicken, cut into pieces, most of skin removed
1 large onion, cut into chunks
1 tablespoon minced garlic
2 teaspoons paprika
2 teaspoons salt
Black pepper to taste
1-18 ounce jar BBQ sauce
Place the chicken pieces into the crockpot. Mix together onion, garlic, spices, and BBQ sauce. Pour over the chicken. Cook on high for 5-6 hours until the chicken is extremely tender. Remove the chicken pieces and shred, carefully removing all of the bones. Put the chicken back in the crockpot, mixing with the sauce, and cooking for an additional 30 minutes. Serve on crusty rolls.
