Russian Tea Cakes

These cookies are a holiday tradition. My grandma used to make them every Christmas and they would melt in your mouth. There are recipes for these everywhere and they are all very similar, if not the same, so I can’t give my grandmother credit for them. I do know, though, that they remind me of her, so in my mind it will always be her recipe.

Russian Tea Cakes

1 cup salted butter
1 teaspoon vanilla 
6 tablespoons powdered sugar
2 cups all-purpose flour
1 cup finely chopped walnuts
1/3 cup powdered sugar, for rolling the cookies in

Preheat the oven to 350°F. 

Cream the butter and vanilla in a medium bowl until smooth. Mix together the 6 tablespoons powdered sugar and the flour. Stir it into the butter mixture until blended. Add in the chopped walnuts. Roll the dough into 1-inch balls and put them a couple of inches apart on a cookie sheet. 

Bake for 12 minutes. Roll each cookie in the powdered sugar while still warm. When they cool, roll them in the powdered sugar a second time.
