I have spared you from the truckload of pumpkin/squash recipes this fall, but the time has come. I can’t put it off any longer. I have been waiting for the weather to get a bit cooler, but it is not cooperating, so I had to give in. Adding pumpkin plus the ale made these waffles so good, I may have to try pancakes next.

Pumpkin Ale Waffles

2 1/2 cups flour
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1 teaspoon cinnamon
4 eggs, divided
1/2 cup milk
2/3 cup pumpkin puree
1 stick butter, melted
1 cup Pumpkin Ale

Preheat your waffle iron. Get out three bowls. In the largest bowl, whisk together  flour, sugar, baking power, baking soda, salt, ginger, nutmeg, and cinnamon.

Divide the eggs between the other two bowls with the egg whites in on and the yolks in the other. In the bowl with the yolks, add the milk and pumpkin. Stir well. Add the melted butter and stir.

Beat the egg whites until stiff peaks form. 

Add the pumpkin mixture to the dry mixture and stir, just until combined being careful not to over mix. Add the beer and stir until combined. Gently fold in the egg whites.

Spray the waffle iron with cooking spray and make the waffles according to the manufacturer’s directions.
