Grilled cheese is probably my favorite comfort food. Served with Campbell’s Cream of Tomato Soup and I am back to being a kid again. It’s the simple things; cheese, bread, and butter, all melted together, to make one gooey, beautiful feast; that make me sit back and say, “aaahhh… life is good.” Then when you add apples and bacon to the mix, it only gets better. Of course, doesn’t everything get better with bacon?
Apple, Cheddar & Bacon Grilled Cheese

Thick slices of bread of your choice
Slices of cheddar cheese
Thin slices of a tart apple
Spread a thin layer of mayonnaise and mustard on the bread. Layer with cheese, apple slices, and bacon. Top with another slice of bread. Place a skillet over medium heat. Melt about a tablespoon of butter in the skillet. Place the sandwich in the skillet (I like to put a lid on it to help melt the cheese). Cook until the bottom of the sandwich is a golden brown and the cheese starts to melt. Carefully flip the sandwich over and smash it down with a spatula. Cook until the other side is a golden brown and serve immediately.
